Agrocybe chaxinggu has rich nutrition, high in protein (19.55%) but low in fat. Its protein contains 18 kinds of amino acids, in which methionine occupies the highest content of 2.49%, followed by glutamate, aspartate, Isoleucine, glycine and alanine.
